PS3 3D-TV and Non-3D AV Receiver. How do I get both 5.1 or 7.1 sound with 3D. AV receiver is not 3D compatible?

Right, I have my PS3 connected directly to my TV through HDMI and I am able to output 3D to my TV.

The TV's optical audio output port will most likely only be able to send audio from its own TV tuner (over the air broadcasts, basic cable). The TV will not be able to use that port to pass audio from any other devices connected to it.

Connect the optical cable from the PS3 to the home theater receiver instead. The PS3 can output video from its HDMI port and audio from its optical port at the same time. Go into the audio settings to switch audio output from HDMI to optical: http://manuals.playstation.net/document/en/ps3/current/settings/audiooutput.html .

Optical cables support 5.1 surround, but only when the audio output is set to "Bitstream" over the optical port: http://manuals.playstation.net/document/en/ps3/current/settings/bdsettings.html#1477 . Optical cables do not support 7.1 surround, but most discs that have it were originally designed for 5.1 anyway. If you want you may be able to set your 7.1 receiver to create simulated 7.1 from 5.1, but I wouldn't worry about it.
